Our Honey

Our honey is produced in small batches and is never blended to achieve a uniform flavour or colour. Each harvest reflects the season, the local flora, and the coastal environments our bees forage in at that time.

Because of this, the flavour, aroma, and colour of our honey naturally change throughout the year. Spring harvests may be lighter and floral, while late summer and autumn honeys often develop deeper, richer tones. This variation isn’t a flaw — it’s proof of authenticity.

We extract and pack our honey with minimal handling, allowing it to retain its natural character. What you taste in each jar or bucket is a snapshot of that moment in the season, shaped by weather, flowering patterns, and the surrounding landscape.

Unlike large-scale commercial honey, which is often blended to maintain consistency, our approach celebrates difference. No two batches are exactly the same, because nature isn’t uniform — and we believe that’s exactly how honey should be.
